Monday - Meal rich in Omega-3 fatty acids, manganese and anti-inflammatory compounds to help prevent rheumatoid arthritis

Cauliflower Burgers (aka "cauliburgers")

 

1     medium cauliflower
6     organic range-free eggs (separate yolks and whites)
3     tbsp flax seed flour
3     tbsp gluten-free flour
       salt
1     tsp nutmeg

Process cauliflower in a food processor. Place in a large bowl, add egg yolks, salt, flowers and nutmeg. Mix everything together and let it sit. Heat olive oil in a frying pan. In a small bowl whisk egg whites with whisker until thickens. Add egg whites and mix everything together until it is light runny bather. Place bather with a large spoon into hot oil to make burgers. Let them cook for 10 minutes or until golden on each side. Serve with green salad or cooked potatoes.
